Sugarfree almond cinnamon buns
Cinnamon buns are really great! I love cinnamon buns and in Sweden we have a special day just for cinnamon buns :) That day was today and therefore we had to have cinnamon buns for "fika" this afternoon.
The recipe is free from:
gluten and wheat
dairy
sugar
soy
yeast
Ingredients for 12 cinnamon buns
Dough
5 eggs
2 tsp ghee (or coconut oil)
1/2 banana
50 ml almond milk
150 g almond flour
4 tsp psyllium husk
1 tsp cinnamon
1/2 tsp cardamom
1 1/2 baking powder
1 pinch of salt
Filling
1 banana
15 g almond flakes
1 Tbsp almond flour
3/4 tsp cinnamon
1/4 tsp cardamom
Oven temperature 175 degrees
1. Whisk 4 eggs by hand for just 30 seconds or so.
2. Put halv a banana, ghee and almond milk in a blender and blend untill combined and then add to the eggs.
3. Combine the rest of the ingredients in a seperate bowl.
4. Now combine everything. I used a large spoon.
5. Let rest for 10 minutes. Now you should be able to handle the dough with your hands without it sticking to your fingers. If it sticks add more flour.
6. Prepare the filling; put banana and almonds in a blender (I blended it just a few seconds) then add the rest using a spoon.
7. Put the dough betweet two pieces of parchment paper and use a rolling pin to make a square about 5-8 mm thick.
8. Spread the filling on the dough and then roll the dough. Cut into 12 pieces and put on parchment paper.
9. Whisk the last egg and brush onto the buns then bake them in the oven for 17- 20 minutes.
Put the buns on a wire rack untill they cooled off
Kanelbullar är ju så bra! Vad jag gillar kanelbullar! Och i Sverige har vi till och med en speciell dag kanelbullen till ära. Eftersom den dagen var idag var vi ju tvugna att ha kanelbullar till söndagsfikat.

Ingredienser för 12 kanelbullar
Degen
5 ägg
2 tsk ghee (eller kokosolja)
1/2 banan
50 ml mandelmjölk
150 g mandelmjöl
4 tsk fiberhusk
1 tsk kanel
1/2 tsk kardemumma
1 1/2 tsk bakpulver
1 krm salt
Fyllning
1 banan
15 g mandelspån
1 msk mandelmjöl
3/4 tsk kanel
1/4 tsk kardemumma
Ugnstemperatur 175 grader
1. Vispa 4 ägg för hand i ungefär 30 sekunder.
2. Lägg en halv banan, ghee och mandelmjölk i en mixer, mixa slät och blanda sen med äggen.
3. Blanda resten av ingredienserna i en seperat skål.
4. Blanda ihop allting. Jag använde en slev.
5. Låt degen vila i ca 10 minuter. Nu ska du kunna hantera degen med händerna utan att den klibbar fast på dina fingrar. Eventuellt får du lägga till lite mer mjöl.
6. Förbered fyllningen; mixa banan och mandelspån (jag mixar bara lite så att det finns små bitar kvar) och tillsätt sen rest med hjälp av en sked.
7. Lägg degen mellan två ark bakplåtspapper och rulla till en fyrkant med hjälp av en brödkavel. Degen ska vara omkring 5-8 mm tjock.
8. Sprid ut fyllningen på degen, rulla ihop degen och skär i 12 bitar.
9. Lägg bullarna på bakplåtspapper, pensla med vispad ägg och baka i ugnen i 17-20 minuter.
