This time a year saffron is quite popular in Sweden and to me it's important to use it when I prepare "christmas bread". This banana bread is perfect for breakfast, as a snack or desert.

This recipe is free from

Gluten and wheat

dairy

sugar

soy

yeast

Ingredients

4 eggs

3 Tspn ghee (room temperature)

50 ml almond milk

1 mashed banana

1/2 banana

200 ml almond flour

1 Tspn chia seeds

2 tsp baking powder

1 g saffron

1 pinch of salt

For the loaf pan:

50 g pecans

1 tsp ghee

Oven temperature: 175 degrees

1. Prepare a loaf pan with ghee and chopped pecans.

2. Beat the eggs and add ghee, almond milk and mashed banana.

3. In a seperate bowl mix flour, chia seeds, baking powder, saffron and salt.

4. Add the dry ingredients to the rest, mix well without overstirring.

5. Pour the batter in a loaf pan, topp with sliced banana (and left over pecans) and bake in the oven for 30 minutes.

6. Remove from the oven and let cool completely on a rack before removing the bread from the pan.

Saffran är ett måste nu innan jul, i alla fall för mig. Ett underbart bananbröd med saffran som man kan äta till frukost, mellis och fika.

2 tsk bakpulver

Till formen:

50 g hackade pekannötter

1 tsk ghee

Ugnstemperatur: 175 grader

1. Förbered en brödform med ghee och hackade pekannötter.

2. Vispa äggen och tillsätt sen ghee, mandelmjölk och mosad banan.

3. Blanda mandelmjöl, chiafrön, bakpulver, saffran och salt i en seperat skål.

4. Blandade de torra ingredienserna med resten och vispa ihop ordentligt.

5. Häll degen i brödformen, toppa med skivad banan (och eventuellt resten av nötterna) och baka i ugnen i ca 30 minuter.

6. Ta ut från ugnen och låt svalna på ett galler innan du tar ut brödet ur formen.
